Popular in Mexican, Haitian, Dominican, and Southeast Asian cuisines, chicken gizzards (aka giblets) are also a beloved thing-to-fry in the American South. They’re an excellent source of selenium–ranking just between eggs and yellowfin tuna. The idea might make you cringe, but an initiated minority know what a delicacy gizzards are!
