Each share includes a mix of 100% grassfed beef, pasture raised pork, and chicken, plus a new recipe card like this Loaded Chorizo Queso Blanco, made with our bold and smoky pasture raised pork chorizo:
Hickory Nut Gap Loaded Chorizo Queso Blanco
Serves 6–8 as an appetizer
A game-day favorite, this skillet queso is loaded with bold Hickory Nut Gap Pork Chorizo, fresh peppers, and creamy queso blanco. Serve it bubbling hot with tortilla chips for the ultimate football season dip.
Ingredients
• 1 pack Hickory Nut Gap Pork Chorizo Sausage
• 1 small yellow or red bell pepper, diced small
• 2 small jalapeños (use seeds for extra heat), diced small
• ½ medium onion, diced small
• 1 (16 oz) container queso blanco or white queso dip
• 1–2 tsp olive oil
• Fresh cilantro, chopped (for garnish)
• Tortilla chips, for serving
Instructions
1. Dice peppers and onion into small pieces. Leave jalapeño seeds in for more heat.
2. Cook chorizo in a cast iron skillet over medium heat, crumbling into small pieces. Once browned, transfer to a paper towel–lined plate. Wipe excess grease from skillet.
3. Add olive oil to the skillet, then cook the bell pepper, jalapeño, and onion until soft and translucent.
4. Return chorizo to the skillet. Stir in queso blanco and cook over medium-low heat until hot and bubbly.
5. Garnish with chopped cilantro and serve right from the skillet with tortilla chips. If the cheese firms up, place back on low heat and stir.

We’re so grateful to the incredible instructors—Donna Kilpatrick, Dylan Kennedy, Ken Smith, and our very own Mikey Hans-Barrientos—for sharing their deep knowledge and passion for regenerative land stewardship. A huge thanks to all the wonderful students who joined us both in the classroom and out in the field—your curiosity, insight, and hard work made the experience come alive.
We’d also like to extend our gratitude to @warrenwilsoncollege and the @wwcfarm for hosting us and helping make this two-week intensive such an inspiring and educational program. And of course, a special shoutout to Mikey, the ringleader who brought this course to life and kept everything running smoothly from start to finish.

Our team had such a lovely time visiting @ecustamarketandcafe in Hendersonville! This beautiful spot, located right off the Ecusta Trail at Lennox Station, is both a cozy café and a thoughtfully stocked local market.
We got to taste a few of their delicious menu items — the Smash Burger (made with HNG beef!), the Grilled Cheese and Cobb Salad, both featuring our pasture-raised HNG bacon. Everything was fresh, flavorful, and perfectly prepared.
Beyond the food, we loved the café’s warm design and welcoming atmosphere. Owners Robert and Emily Gunn have built something truly special — a gathering place that celebrates local food, community, and connection. If you haven’t visited yet, we highly recommend stopping by for a bite or a coffee the next time you’re in Hendersonville!

We’ve had oodles of piglets at the farm lately! In the pens near the store, you’ll find some friendly young Yorkshire sows and their Yorkshire–Duroc cross piglets. And if you spot piglets running around the orchard—don’t worry, they’re allowed out there. At this age, they’re nearly impossible to keep fenced in, and since they can’t do much damage and always return to mama, we let them roam.
Here, they’re giving Virginia’s swooshy pants and sneakers a very thorough inspection. Visitors are welcome to let piglets check out their pants and sneakers, too—just please don’t chase or scare them.
